This mill knocks the husk off the cocoa beans, crushing them somewhat. For the chocolate maker who is doing batches by pounds, it's a real time saver. The crush is then ready to be winnowed by blowing away the lighter shell material. It comes
complete with a handcrank, bucket-top base and 2 gallon hopper.
Its crush promotes efficient winnowing. The particles are kept larger in the process of separating the nibs from the shell, which helps to reduce winnowing losses to levels below 10 percent by weight.
Initially, the upper gap lightly cracks the whole cacao along the natural lines present in the bean.
Then the central chamber between the three rollers tumbles the pieces, loosening the husks from the nibs.
The appearance may vary from the picture. Given the price and availability of wood these days, we are using good quality repurposed plywood.
